As for the fats, I am a big fan of coconut oil and I put a TBSP in my oats in the morning. I cook a lot of my proteins in oils too -- I&#039;m pretty liberal with the olive oil. One of my favorite things is to put 2-3 TBSP of olive oil in a skillet and to cut up bite-sized pieces of chicken, coat them in some type of seasoning (Chef Paul or Emeril) and cook it that way. It&#039;s much more flavorful than just baked and you are getting in your good fats. Keep me updated on everything!!]]></description>

		<description><![CDATA[I found your blog when perusing the eat clean forum, and I am a total fan of yours!  I used to be fit and fab, but due to a major car accident in Jan 2009, I am at my heaviest weight ever!  eek!

I am a newbie to eating clean and it can be overwhelming, but you seem to put things in perspective (for me).    :)

Hope you don&#039;t mind if I blog-stalk ya!  You already look completely fabulous, btw... I am very jealous at the moment.  haha

PS
Any idea of how I can get some of those healthy fats into my diet?  I&#039;m not a fan of nuts (not any that count for being healthy, that is).]]></description>
